Jennie Cook’s Zucchini Butter

Who knew zucchini and yellow squash could make such a rich, buttery spread? This recipe from Food52 is a brilliant way to make use of all the summer squash you’ve just bought or harvested from your garden. Here are some tips on how to use it:

How to use it? Spread it on toast in place of actual butter. Cake a thick layer in a sandwich with salted tomatoes or soft cheese. Sauce a grilled pizza. Consider it a side dish. Or just eat a big heap of it, right out of the pan, like we did.
